Nicole Bakes....Eclairs!

11:00 AM - 12:00 PMPlease join Nicole Masters and Susan Cosden for Nicole Bakes . . . Eclairs. the first of Nicole's summer baking demonstrations! You may know Nicole as a member of the CEEBJ adult choir, but she is also an award-winning baker and Pastry Arts Student at MATC. Nicole loves the challenge of French Pastry and one of her favorite things to bake is Chocolate Eclairs. She can't wait to show you how much fun French Pastry can be! Susan Cosden, our Director of Lifelong Learning, will add a dash of Jewish learning to the mix.
This program is sponsored by the Adult Lifelong Learning Committee and is open to all adults and youth age 10 and above. Unless the youth is a very experienced baker, we recommend they are accompanied by an adult.
Shopping List
Choux Pastry Ingredients:
Water 4 oz
Whole Milk 4 oz
Unsalted Butter 4 oz
Pinch of salt
Bread Flour 6 oz
Large Eggs 5-6
Éclair Filling Ingredients:
Whole Milk 12 oz
Egg Yolks 135 oz (about 2 ½ egg yolks)
Cooking Clear Starch 1 oz
Sugar 4 oz
Butter ½ oz
Vanilla Extract or Vanilla Bean Paste 1 tsp
Additional Whole Milk 4 oz
Ganache:
Semi Sweet Chocolate (chopped) 4 oz
Heavy Cream 4 oz
Helpful Tools
You will need the following tools to bake Chocolate Eclairs:
Saucepans
Mixer
Whisk
Wooden Spoon
Spatula
Mesh Strainer
Cookie Sheet with parchment or silicone liner
Mixing Bowls (2)
Piping Bags (2)
Piping tip and coupler (Only if you have them, it not we’ll work around it!)
